Summer is the season of vibrant flavors and refreshing dishes, and there’s no better way to celebrate the abundance of seasonal fruits than with a tasty Summer Peach Salad. Cam and I love this salad so much we made it 3 times in a week! Needless to say, this salad is a must-try! Whether you’re looking for a light and flavorful lunch or wanting to show off to your friends at a summer dinner party, this salad is sure to leave everyone wanting more.



  • Fresh arugula leaves
  • Ripe peaches, sliced
  • Fresh blueberries
  • Pistachios
  • Parmesan cheese, grated 
  • Honey
  • Truffle salt
  • Olive oil
  • Lemon Juice

How we make it:

  1. Prepare the Ingredients: Wash and thoroughly dry the arugula leaves. Ripe, juicy peaches are key to this salad, so select ones that are fragrant and slightly soft to the touch. Wash the blueberries and pat them dry gently. Roughly chop the pistachios and grate the parmesan cheese for added texture and savory flavor.

  2. Assemble the Salad: In a large salad bowl or on a serving platter, arrange a bed of fresh arugula leaves. We always like to squeeze and tear the arugula to open it up and release more flavor. The peppery taste of arugula perfectly complements the sweetness of the peaches and blueberries!

  3. Add the Peaches and Blueberries: Generously layer the sliced peaches and the fresh blueberries over the arugula bed. The peaches will provide a burst of flavor with every bite, while the blueberries add a fun pop of color and a touch of tanginess.

  4. Sprinkle with Pistachios and Parmesan Cheese: Scatter the chopped pistachios and grated parmesan cheese over the top of the salad. The pistachios bring a crunch and nuttiness, while the parmesan adds a subtle salty richness that pairs beautifully with the sweetness of the peaches.

  5. Dress the salad with Honey, Truffle Salt, Olive Oil, and Lemon Juice: For the perfect finishing touch, lightly drizzle honey over the entire salad, followed by a spritzing of olive oil from our favorite oil sprayer and a squeeze of fresh lemon juice. Then, sprinkle a pinch of truffle salt over the salad, elevating the dish with its delicate, earthy aroma. 

  6. Toss and Serve: If serving an individual portion, gently toss the salad to ensure all the flavors are evenly distributed. For a more formal presentation, leave the salad as is, allowing guests to enjoy the diverse flavors with every bite. Serve immediately and relish the summer essence of this delicious peach salad.
