Lemon Chicken Orzo Pasta
Ingredients:
- 2 chicken breasts, diced into ½-inch pieces
- 6 cups chicken stock
- ¾ pack of orzo
- 1–2 tbsp lemon juice (adjust to taste)
- Chopped fresh parsley
- Olive oil
- Salt, pepper, and garlic powder to taste
Instructions:
- In a medium or large pot, heat olive oil over medium heat. Add the diced chicken and cook for 5–7 minutes, seasoning with salt, pepper, and garlic powder.
- Pour in the chicken stock and lemon juice, then bring to a boil.
- Stir in the orzo and a pinch of parsley. Let it cook for about 12 minutes, stirring occasionally.
- Serve warm with a drizzle of olive oil and a sprinkle of fresh parsley on top. Enjoy!
